They say cooking is love made visible. Today I see a whole lot of love in my batch of meals. I can taste the attention and effort which makes for the most satisfying eating.
Shaved Chicken– this can also be referred to as flayed chicken. It’s essentially taking a chicken breast that’s mostly thawed and slicing slivers of the breast with a sharp knife. Then it is tossed (almost breaded) with a mix of FlavorGod seasoning and pepper for a slightly spicy rub. On the pan for 3 minutes each side and you get a delicious thin piece of chicken that’s well cooked an juicy.
Roasted Buttercup Squash and Carrots- Roasting is quickly becoming my favorite mode of cooking vegetables. Large cuts of buttercup squash and carrots get tossed in olive oil and garlic and lemon seasoning the popped in an oven preheated to 450 degrees for 40 minutes and done! That squash has this amazing buttery texture only squash can have, like a potato but sweeter (and somehow healthier!).
Roasted Sriracha Green Beans– There is so much creativity that goes into cooking. There are no limits to what can be done with what’s in your pantry if you just try. I took the New Mexico Dried Chili salsa I made earlier that week, chopped garlic, FlavorGod Everything seasoning (think Mrs. Dash) and Sriracha Chili Sauce. Tossed with whole green beans, roast in 450 degrees for 40 minutes, then toss with 1/4 lemon juice and one tablespoon of olive oil and vinegar dressing (totally optional, in hindsight I don’t think it was necessary). I wanted something tangy and spicy to go with this batch and the combination of spices made a deliciously complex flavor with these beans.
